It is once again time for the Snowbirds who are enjoying our wonderful Florida winter to gather at the annual Snowbird Extravanganza in Lakeland.

A Breakfast For Health and Weight Loss

I am eating for health and weight loss.



This morning's breakfast consisted of:

  • 6 oz poached egg whites (easily digestible protein) , seasoned with spices/sea salt, basil, onion powder, 1 tsp organic extra virgin coconut oil (MCT fat produces energy and increases metabolism)
  • Steamed broccoli and kale (nutrient dense, fiber dense complex carbohydrates)
  • 3 black olives (monounsaturated fatty acids may decrease inflammation, reduce insulin resistance which reduces the tendency to store fat)  
  • Fresh picked basil (flavonoids for cell protection, leaf oil for anti-bacterial , anti-inflammatory and vitamin A for heart health)


  • Morning Tea: I made a teapot mixture of Green Tea, Ginseng Vitality and Natural Herbs Tea
Green Tea for Antioxidants (cell protection), Ginseng for Energy and Vitality, Natural Herbs for digestion and elimination

Roasted & Toasted Nutrition!

What is on your dinner plate this evening of Friday, January 13?

At our house, tonight's delicious menu is:

Roasted Veggies
[Red Baby Potatoes, Carrots, Broccoli, Baby Portabello Mushrooms, Baby Sweet Peppers, Mango]

The vegetables are first stirfried in olive oil, sesame oil, lots of Garlic, Ginger and White Wine


Then they are roasted in the oven til slightly crisp.
Just before setting in the over, they are drizzled with a sauce of Extra Virgin Olive Oil, Fresh Sqeezed Lemon Juice and Organic Agave Syrup


Once out of the oven and on the plate, the veggies are topped with Roasted Kale
[Sprinkle kale lightly with olive oil and lemon juice, then sprinkle with Spike, Onion Powder, Garlic Powder, Garlic Powder and Parmesan Cheese then roast in oven]


The veggies were also topped with Freshly Roasted Pumpkin Seeds
[Place on flat pan, spritz lightly with Olive Oil and sprinkle with Spike, Powdered Garlic and Onion Powder then roast in oven]

Healthy Heart New Year Resolutions

  • Brussel Sprouts   [Benefit: Supports the body's detoxification system thus minimizing damage by free radicals]
  • Broccoli:   [Benefit: Contains high amounts of glucoraphianin which breaks down fat, preventing it from clogging arteries]  
  • Zucchini   [Benefit: Contains Vitamins A & C, Potassium, Folate and Fiber, all which contribute to lowering stroke risk]
  • Bosc Pear   [Benefit: Contains 30% more potassium than an apple and is necessary for maintaining heartbeat and muscle contraction]

Free Recipe: Cream of Asparagus, Celery, Fennel & Portabello Soup


There's nothing like the full-bodied flavor of a steaming, cream soup made with fresh, organic vegetables and home-grown herbs!

The original recipe was tasty but for the Christmas season, I had additional vegetables so I wanted to experiment with and use them. I was not disappointed!

·         1 Lb. Fresh asparagus


·         1 Medium red onion (finely chopped)




·        ¾ Cup of celery hearts (finely chopped)
·         ¾ Cup fresh fennel (finely chopped)
·         ½ Cup baby portabellos (finely chopped)




·         1/2 Cup vegetable or turkey broth





·         3 Tablespoons Nutiva Extra Virgin Coconut Oil (may substitute with Butter)

·         4-5 Tablespoons non-bleached white flour


·         1 Teaspoon Spike (may substitute with Mrs. Dash & Sea Salt)





·         1 Teaspoon ground black pepper
·         I Teaspoon onion powder (or more, as per taste)
·         1 1/4 cups vegetable or turkey broth




·         1 Cup original almond milk (may substitute with cow’s milk or soy milk)




·         1/2 Cup plain Greek yogurt




·         Zest of one medium lemon



·         1 Tablespoon fresh squeezed lemon juice (as per taste)



·         1/4  Cup fresh-picked basil



·         Optional: 1/4 Cup grated Parmesan cheese

Directions
1.    Place asparagus, chopped onion, fennel, celery and portabellos in a saucepan with 1/2 cup of broth. Bring the broth to a boil, reduce heat and let simmer until the vegetables are tender. Just before you remove this mixture from stove, add ¾ of the fresh basil.




2.    Place vegetable mixture in an electric blender 




and puree until smooth.




               


3.    Melt coconut oil in the pan that was used for simmering the vegetables Stir while sprinkling flour, spike, pepper and onion powder into the oil. Do not let the flour brown. Allow the mixture to cook approximately 1.5 minutes.




4.    Stir in remaining 1 1/4 cups broth and increase the heat. Continue stirring until the mixture comes to a boil.




5.    Stir the vegetable puree and milk into the saucepan. 





Whisk the Greek yogurt into the mixture, 


followed by lemon juice and lemon zest. 



Stir until heated through, then ladle into bowls. 





Garnish each bowl with 3-4 basil leaves shaping it like a flower.




6.    Optional: Sprinkle with Parmesan cheese before adding the basil.

Fondues are definitely a labor of love as they require a significant amount of time and attention. In my experience, timing is everything when preparing cheese fondue. But it is a fun and interesting meal which everyone always compliments and enjoys.
